Instructor: Fabrizio Marino

Born in 1979, Fabrizio Marino, originally from Empoli, with a Puglian mother and a father from Livorno. He began his culinary training in Tuscany and quickly expanded his expertise through various internships, including abroad. These were years of intense work and deep dedication to the culinary arts, which led him, from 2008 to 2016, to collaborate with Joia restaurant in Milan—the first vegetarian restaurant in Europe to earn a Michelin star—alongside maestro Pietro Leeman, who profoundly instilled in him a love and understanding of the plant-based culinary world.

His free spirit and desire to travel then took him to work in the East, where he combined sustainability and respect for nature with a meticulous focus on the selection of raw materials, extending this philosophy to the tableware and materials used to present food.

Despite being born in a region renowned for its meat-centric gastronomic tradition, Fabrizio Marino chose to reinvent fine dining with a modern, entirely plant-based approach.

Today, he is the chef and owner of Maggese, a restaurant located in San Miniato, where he showcases vegetarian and vegan cuisine that draws inspiration from and continues to explore new horizons. By merging his exploration of the plant-based world with a desire to offer an inclusive and immersive dining experience, Marino daily pays homage to flavor and aesthetics, establishing his cuisine as a recognized form of art on the international stage.
