You will create dishes that enhance local products and breeders, with unmistakable flavor pairings.

In this Masterclass, you will see:

  • Preparation and tasting of a complete menu: appetizers, first and second courses.
  • The importance of knowing the territory and its characteristic products, highlighted and enhanced with expertise.
  • The use of vegetables with creative taste pairings.
  • Plating methods that make the dishes look like canvases.
  • Techniques for processing raw materials.
  • Storage, cooking, plating, and tasting of the finished products.

Instructor:

Gaetano Trovato

Born in Sicily, Gaetano Trovato moved with his family to Colle di Val d’Elsa at the age of six. His childhood memories of the family farm in Sicily introduced him to local traditions and culture. Gaetano decided to further his knowledge by traveling to Rimini, Turin, Switzerland, and France, where he had the opportunity to work with great masters like Roger Vergè and Gaston Lenotre. Before starting his adventure with Arnolfo, Gaetano worked for Angelo Paracucchi, where he "learned to bring taste to life." The Arnolfo restaurant was born in 1982 when his mother's trattoria transformed into a restaurant. Four years later, Michelin crowned him as the youngest Italian star chef. The current location followed when the original space became too small. The second star arrived in 1999. Today, Gaetano Trovato is also an honorary member of the Jeunes Restaurateurs d’Europe.
