Chef Stefano Cipollini, born in 1985, has a career that has nothing to envy to chefs with decades of experience.
Chef de partie at “Il Pellicano” (Porto Ercole) in the year it was awarded 2 Michelin Stars, he worked alongside Gaetano Trovato at the Arnolfo Restaurant (Colle Val d’Elsa) 2 Michelin Stars, then moved to Massimiliano Alajmo’s court at “Le Calandre” 3 Michelin Stars and later at “La Montecchia” one Michelin Star.
In 2011, he accompanied Chef Luca Landi on the important journey that would lead the “Ristorante Lunasia” to its first Michelin Star.
As a teacher and coordinator of the Advanced Professinal Cookery Course at Scuola Tessieri, his motto is “Perfect, always!”: perfection is the starting point and the final detail of every preparation. “Order, discipline, and constancy: a fundamental mantra for all young people who want to embark on this fascinating career!“.
